Gonzalo Castillo
Gonzalo has spent 45 years farming coffee, livestock, and a small menagerie of fish, pigs, and horses—but his relationship with the land goes back even further. Raised by a grandfather who instilled a deep respect for the natural world, he spent decades working within conventional, pesticide-heavy systems before a personal health crisis pushed him to rethink everything he knew.
Despite holding three major sustainability certifications, he realized he wanted to be organic not just on paper, but in practice. That shift transformed both his farm and his philosophy. Today he’s a local resource for regenerative farming, sharing methods and insights with neighboring producers.
His three children—all doctors—have also trained in coffee, from farm management to cupping to barista craft. Together, they form a multigenerational team dedicated to producing coffee that honors both the land and the people who depend on it. Gonzalo’s care is exacting yet nurturing—much like the way he raised his family—and it shows in every harvest.
